About us
Omakase means trust, both ways
Who we are, how we work and why this restaurant is set up the way it is.
Omakase means trust, both ways
The counter seats twelve so the chef can watch every plate land. The fish is bought that morning, the rice is seasoned to the fish rather than the other way round, and the menu is spoken, not printed.
How we got here
Trust runs both directions: you trust the counter with the order, and the counter trusts you with the truth about what is best tonight, including the humble things.
WHAT WE DO
The work in one view
Omakase counter
The chef's sequence, twelve to sixteen courses, decided that morning.
A la carte
Nigiri and rolls at the tables, from the same fish as the counter.
Lunch sets
A shorter, faster, gentler-priced way into the same kitchen.
Sake pairing
A short list poured to match the sequence, chosen plainly.
Private counter
The twelve seats, one party, one unhurried evening.
“A short quote from a happy client belongs here. Two or three sentences is usually enough to make the point without losing the reader.
